1 1/4 cups boiling water
1 cup uncooked oats
1/2 cup soft butter
1 cup sugar
1 cup firmly packed brown sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Preheat oven to 350º. Butter and lightly flour two 9-inch cake pans.
Combine water and oats, let stand 20 minutes. Beat together butter, sugars and
eggs. Add vanilla. Blend. Sift in remaining ingredients. Stir in oats. Blend
thoroughly. Pour into pans. Bake for 50-55 minutes or until a toothpick comes
out clean.
